Chocolate Orange Granola
This is absolutely delicious and perfect for this time of year. Nothing says Christmas like chocolate orange! By having this for breakfast or as a snack you can satisfy the cravings and massively save on calories! Hurrah!
- 300 g porridge oats
- 2 tbsp coconut oil
- 25 g sunflower seeds
- 100 g almonds
- 100 g dark chocolate chips
- 2 medium oranges zest and juice
- 4 tsp maple syrup
- 1 tsp cinnamon
Preheat the oven to 180C / 350F and line a baking tray with baking parchment.
In a large mixing bowl add the oats, sunflower seeds, almonds, dark chocolate chips, orange zest and cinnamon and stir until combined..
In a small, microwaveable bowl, place the coconut oil and microwave for 2 minutes until melted.
Add the maple syrup and the orange juice to the melted coconut oil and mix to combine.
Pour the coconut oil mixture into the dry ingredients and stir well until coated.
Pour the mixture onto the lined baking tray and spread out with a spoon to form an even layer.
Bake in the oven for 30 minutes, stirring halfway through. It will turn a darker shade and should crisp up slightly. Once cooked leave to cool and store in an airtight container for up to 1 week.
