Recipe: Cranberry Bakewell Bites



Cranberry Bakewell Bites

These are perfect to stop you reaching for the biscuit tin or that chocolate bar.  They taste like a bakewell slice but with no butter, dairy, white flour or refined sugar so they are much better for you (though if you are trying to lose weight limit these as a treat).  Perfect if you have guests coming round or simply with a cup of tea mid-afternoon!

  • 100 g rolled oats
  • 50 g ground almonds
  • 50 g wholegrain spelt flour
  • 1 g baking powder
  • 1/4 tsp salt
  • 50 g dried cranberries
  • 1 egg
  • 2 tsp almond butter
  • 100 ml maple syrup
  • 1 tsp almond extract


  1. Preheat the oven to 180C / 350F and line a baking tray with baking parchment.

    Combine the dry ingredients in a large bowl and add in the dried cranberries.  Set aside.

    Place the coconut oil, almond butter and maple syrup in a microwaveable bowl and microwave on high for 2 minutes until the coconut oil has melted.  Stir with a fork to combine.

    Add the coconut oil mixture to the dry ingredients along with the egg and the almond extract.

    Using an ice-cream scoop or a dessert spoon scoop some of the mixture and place it on the baking parchment (no need to flatten as the mixture will spread when cooking).  Leave approximately 2cm gap between each bite.

    Place on the middle shelf of the oven and bake for 12-14 minutes until slightly golden.

    Take them out of the oven and place the bites on a wire rack to cool completely (or if you simply can't wait they are also delicious warm!).
