Maple Porridge with fresh blueberry compote
This breakfast dish is so tasty, quick to make and really warms you up on a Winter morning. The tartness of the fresh blueberries goes perfectly with the warm sweetness of the porridge. You can also use the blueberries to top your little ones' porridge / cereal too so they get one of their five a day and a vitamin C boost from the lemon juice.
- 50 g rolled oats
- 200 ml almond milk or oat milk
- 1 tbsp maple syrup add more or less, according to taste
- 50 g fresh blueberries
- 1 tsp lemon juice
- 1 tsp chia seeds (optional)
Place the blueberries and lemon juice in a pan together with a splash of water and cook until the blueberries have softened (about 10 minutes).
Meanwhile, place the oats, maple syrup and almond milk in a pan and set over a medium heat. Cook for about 5 minutes until the oats are soft and the almond milk has been absorbed. Add more milk if necessary.
Once the blueberries have softened you can either serve them as they are or you can take some out to give to your little one* with their cereal and add the teaspoon of chia seeds to the pan and continue to cook for another 5 minutes to make the blueberry compote slightly thicker.
Put the porridge in a bowl with the blueberry compote on top and enjoy!
* Please note that where a recipe can be adapted for baby, it is designed for babies over 6 months old. Please ensure the consistency of the finished meal is suitable for your baby's age i.e. blend or puree where necessary, and remove any ingredients like honey for babies under 1 years old and any ingredients you know or think your child may be allergic to e.g. if there is a family history of allergy to nuts.
