Supergreens Soup

This is such a simple and quick soup to make and it is bursting with goodness.  Just seeing it's vibrant green colour makes me feel healthy!  Perfect for summer or winter as the mint gives it a little lift.  I like to top mine with some sesame and pumpkin seeds for an extra nutritional boost.

Ingredients

  • 100 g broccoli (approx. half a head of broccoli)
  • 300 g frozen peas
  • 2 large handfuls spinach
  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 1 chicken stock cube
  • 750 ml water
  • 1 tsp dried mint
  • salt and pepper to taste (if using a stock cube you may not need extra salt)
  • 1 tbsp olive oil

Instructions

  1. Heat the olive oil in a large pan and add the onion and garlic.  Fry for 5 minutes until the onion has softened.

    Add the broccoli and the stock cube and cover with the water.  Bring to the boil and add the peas and spinach.

    Once the spinach has wilted, add the mint and salt and pepper.

    Reduce the heat and simmer for 10-15 minutes (or until the broccoli and peas are cooked).

    Allow to cool slightly and blend with a hand blender.
